团团圆圆东河饼

</p><p>中秋、国庆喜相逢。“团圆节”前夕,笔者又一次回到魂牵梦萦的故乡东河,与孩提时的同学——义乌市城西街道七一村(原东河乡东河村)党委书记、十九大代表何德兴,在村工商街的肉饼店再次品尝了一回地道的东河肉饼。</p><p class="qf_image big noneditable" contenteditable="false"><img /></p><p class=""> 凡到义乌品尝过东河肉饼的人,大抵都不会忘记那独特的美食滋味。当您走进朴素简洁的店堂,临桌而坐,两眼直瞪瞪地望着放在门边的平底锅,随着“滋滋”的油煎声,薄如宣纸、色若琥珀的双层饼,随着师傅那双巧手,像一轮飘忽的晕月,在您的眼前翻转着。只要一会儿,您就可猛吸一口飘荡着薰香的空气,咋巴着嘴,伸开筷子,享受起这精美的、如同艺术品的肉饼……</p><p /></p><p>价廉而味美的“她”于是美名远扬。不只本土本乡的,天南海北的尝鲜者也无不慕名而来。便有精明人看准了这一“道道”,一时间,义乌城乡大街小巷“东河肉饼”小吃店如雨后春笋般冒了出来。 当地政府为了继承和发扬传统的饮食文化,连续举办了八届东河肉饼技艺大赛,各路高手同台较量,使得东河肉饼更是香飘万里,声名远扬。近年来每逢中国传统佳节,包装精美的“东河肉饼”还飘洋过海,让大洋彼岸的同胞和老外也品尝到中国地方美食佳肴。</p><p>事实上,“东河肉饼”确实有资格“遍地开花”,因为肉饼的鲜美确实迷倒了无数的市民。它虽薄如宣纸,却由两层麦饼粘连,而且,中间夹着肥肉与葱或韭菜,由肉饼师傅旋拉延展而成。用猪油煎烤的肉饼,色香味俱全,其诱惑力之大,实非其他食品可比。</p><p /></p><p>其实这饼应叫“夹肉双层麦饼”。可为什么叫“东河肉饼”呢?这要到它的诞生地义乌东河乡东河村(现分为五一、六一、七一村),才能了解其中的奥秘。</p><p>东河饼在东河只称“肉饼”。制作技术世世代代视作“专利”秘而不宣,能制作“东河饼”的只限东河村人。东河村现有近千户人家,3000多人口,几乎家家会做“东河饼”。而东河村四周的村庄,都没有一户人家能制作出如此精美的佳肴。</p><p>东河肉饼之所以倍受青睐,与它的制作考究、味美色佳是分不开的。麦粉要选上等的,最好是当地产的小麦,别处的粘性就要差一些,制饼时有可能拉出破洞。选好麦粉,加盐是关键。500克原料大约加入25克盐,然后合水揉成面团,搓成手腕粗细的长条,再一个个摘成小孩拳头大小的面团,重量按500克摘成24个为最佳。懂行的制作者一般要把摘好的面团放在大案板上醒5—10分钟,直至用手在其表面上轻按感觉有一种韧性时才开始制作肉饼。肉饼制作的程序几乎和魔术师的表演差不多,不像我们平常做饼拉面条要用擀条前推后揉,制作东河饼,一双手就足够了。先是取出两个表面风干的面团,用手压成一厘米厚的面饼,再取出少许早己准备妥当的用三层肉、葱、盐、味精混合斩垛成的肉馅,夹在两块面团的中间,制作人站着身子就可变“魔术”了:左手捏着饼身,右手扯着饼沿,双手一下一下有节奏地旋转着,扯拉着,随着一忽正一忽反的旋转扯拉,肉馅中青葱的色泽透过越捏越薄的饼面渐渐地明晰起来。大约拉扯到饼半径近10厘米时,饼已成一张琥珀色的“薄纸”,“纸”身上满是点点斑斑的青葱肉末,看去宛若夜间的星空,一张正宗的“东河肉饼”也就做成了。</p><p /></p><p>煎饼比制作要容易些,不过煎不好,吃起来滋味就差得远。特别是制作鸡蛋肉饼,没“绝招”往往会把饼煎得面目全非。据行家介绍,煎“东河肉饼”时,先要用猛火把锅底烧红,再改用文火,然后用专用工具在锅内肉饼大小的地方涂上食用猪油,“滋”的放入一张肉饼。待饼的一面稍煎黄后,反过来煎另一面。这时,饼身会膨胀成馒头状,如要做鸡蛋肉饼,趁此时在“馒头”上用筷子戳一个小洞,灌入打开的鸡蛋液就可以了。东河肉饼时兴边煎边吃,那味道是没得说的,引用一位北京人的话,叫“盖帽”。</p><p>老同学何德兴介绍说,“东河饼”在东河也非“俗物”。吃肉饼在东河有一种神圣的仪式。家家围坐一桌尝遍饼香,在前几年也只是端午、中秋、春节等为数不多的节日里才行。平常的日子,在东河人眼里,只有在男青年上门认亲,而女方家人完全表示同意的状况下,才会煎此饼以示百年好合、团团圆圆;女儿出嫁的头一年,东河娘家也会热热闹闹地担一担“肉饼”去女婿家,分发给乡亲邻里拜祝全村和睦团圆。除了这些,只有当主人认为来了非常受人敬重的客人,才会揉面买肉煎肉饼。 现东河人大多为何姓。据历史记载,明朝的1416年以前,该村只有一户姓潘的寡妇。明成祖永乐年间何姓祖先赘居于此,此后历经500多年生发繁衍,成了如今的大村落。东河人勇于闯荡世界,出外经商、求学的很多,东河肉饼饼薄味佳,经久不会变质,这当是由家乡父老为远游的东河人准备的干粮演变而成的一种特色小吃吧。 </p><p class="empty_paragraph"> </p><p
