义乌麻糖:香甜薄脆,承载几代人的年味记忆

<p>时间过得真快,眨眼间又到了腊月廿一,再过8天又要过年了。儿时的我对过年是一种渴望和喜悦,掰着手指头盼过年,但现在似乎已沦落成一种负担。</p><p>&nbsp;</p><p>年味为何越来越淡?或许现在的生活太好了,就像芝麻开花节节高,平时每天像过年。</p><p>&nbsp;</p><p>儿时渴望过年,切麻糖是家家户户必不可少的。切麻糖是我记忆深处最开心、最甜蜜、最难以忘怀的。</p><p class="myunlistitemclass">(孩子们捂住耳朵看爆米花)</li></ul><p>&nbsp;</p><p>&nbsp;</p><p>&nbsp;</p><p>&ldquo;嘭&rdquo;!弄堂里响起&ldquo;爆米花&rdquo;声音,孩子们都会用双手捂着耳朵,胆子小的还会躲得远远的,等待那一声巨响。</p><p>&nbsp;</p><p>当爆米花或者玉米花从那只黑乎乎的麻袋里倒入箩筐,扑鼻的香味随之飘溢时,大家就知道快要切麻糖了。</p><p /></p><p>&nbsp;</p><p>我家切麻糖之前,母亲会用稻谷在锅里噼噼啪啪爆出谷花,还有炒冻米、炒粟米等,加上爆米师傅爆出的爆米花、玉米花、爆田塍豆花、芝麻等切麻糖的原材料。</p><p>&nbsp;</p><p>腊月廿十左右,请村里切糖师傅楼三元来家里切麻糖。切麻糖的案板很简单,用两条四尺凳架起一扇洗刷干净的门板(门板是临时卸下的,用完再安装上)。放上切糖的篮筐、木框架、木滚筒、夹板、薄刀等,就开始了熬糖。</p><p class="myunlistitemclass">(熬糖工序)</li></ul><p>&nbsp;</p><p>熬糖的技术很讲究。锅里倒入凉水,放入义乌红糖,开火慢慢熬,不停的搅拌,直到糖油熬成深棕色。熬到一定的程度,切糖师傅就会用棍棒蘸起少许糖浆,两指试拉,觉得粘稠度合适时,起锅倒入装着配料的篮筐里,搅拌均匀,倒入麻糖框内。铺摊均匀,用滚筒碾压平实后、划成四刀,再趁热切成薄片。</p><p class="empty_paragraph">&nbsp;</p><p>谷花糖、芝麻花生糖等自家人是舍不得吃的,一般是春节拜年期间招待客人用的。</p><p>&nbsp;</p><p>义乌麻糖种类很多,有糙米糖、谷花糖、冻米糖、粟米糖、芝麻花生糖、玉米花糖、田塍豆糖等。</p><p>&nbsp;</p><p>义乌麻糖是传统特色小吃,起源于明代。以香、甜、薄、脆的独特风味闻名于世,形似玉梳白似璧,薄如蝉翼甜如蜜,香而不艳,甜而不腻,回味无穷。</p><p>&nbsp;</p><p>义乌麻糖,吃在嘴里,甜在心里。而家里请人切麻糖那种神秘感,却是只有那时候才有的,最最令人难忘的记忆。</p>
