/></p><p>&nbsp;</p><p>追溯月饼的历史,我们会发现,古时候是用&ldquo;胡饼、月团&rdquo;等,类似的糕点祭拜供奉月神的,相传,在唐朝的某一年中秋之夜,唐玄宗与杨贵妃一同赏月。杨贵妃觉得&ldquo;胡饼&rdquo;这个名字不够雅致,正当抬头仰望那皎洁的明月,心潮涌动,脱口而出&ldquo;月饼&rdquo;二字。从此,&ldquo;月饼&rdquo;这一名称便在民间逐渐流传开来。</p><p>&nbsp;</p><p>月饼与历史事件的渊源,更是为其增添了几分传奇色彩。相传元末时期,朱元璋为了联合反元力量,将写有&ldquo;八月十五夜起义&rdquo;的纸条巧妙地藏入月饼之中,以此传递信息。最终,起义成功,朱元璋为了犒劳将士们,便将月饼分给了大家享用。明代建立后,中秋吃月饼的习俗便由此流传开来。</p><p>&nbsp;</p><p>其实,月饼在我国有着悠久的历史。据史料记载,早在殷、周时期,江、浙一带就有一种纪念太师闻仲的甜点,名为&ldquo;太师饼&rdquo;,它边薄心厚,口感独特。苏式月饼便是由这&ldquo;太师饼&rdquo;演变而来,&ldquo;太师饼&rdquo;是作为行军干粮出现的,后传入民间。而义亭月饼,便是苏式月饼在义乌这片土地上的延伸与传承,一九五零年义亭成立合作商店,一九五二年合作商店做糕点时,推出中秋月饼。心灵手巧的饼师们还将嫦娥奔月的神话故事作为食品艺术图案,精心印制在月饼上或包装纸上。使得月饼不仅成为中秋佳节的必备食品,更成了承载着美好寓意与团圆的象征。</p><p class="empty_paragraph">&nbsp;</p><p>&nbsp;</p><p>改革开放后,王义民先生传承了原义亭供销社纯手工制作工艺衣钵 ,并注册了义亭第一个月饼品牌&mdash;亿民月饼。《亿民月饼》不得不说是义亭月饼的鼻主。让我们随着义亭文联作家协会采风团的脚步,走进亿民月饼厂一探究竟吧。</p><p>&nbsp;</p><p>金秋九月的义亭,空气中都弥漫着醉人的香味,远远就能闻到从月饼生产车间散发出来的,那种经过烘烤成熟的芝麻香、果香味。只见生产月饼车间内,工人们身着工作服,工作帽,手套、口罩正忙碌并熟练地操作着一系列制作流程,生产车间为保证食品安全,外人没有经过消毒 ,是不得入内的,只能隔着玻璃窗观望,只见案板上放着一团团待起的面团,馅料包进面团,送入机器,一个个厚薄匀称的饼排列有序,盖上大红章后,由烘烤师傅送入烘烤箱,几分钟后,黄灿灿,香喷喷的月饼就出炉了。然后由包装人员用油纸10个包成一筒,最后装箱送到客户手里。旺季日销高达1.5万筒月饼的亿民月饼厂,手工制作已经远远满足不了消费者,基本上现代化机器替代了人工制作。唯独&ldquo;和面&rdquo;&ldquo;起酥&rdquo;机器替代不了的,这也是制作月饼中最重要的一个环节。</p><p>&nbsp;</p><p>看似很简单的工艺,从选料到制作要七,八道工序呢,&ldquo;和面&rdquo;是做月饼的第一道工序,也是最关键的一道工序,要采用上等面粉,垒在台面上,中间扒出个窝放入猪油,慢慢加入滚烫的开水,然后一步步揉成面团,王厂长耐心地解说道:这种加了水的面团叫水油皮,做月饼还需要加入一些&ldquo;酥&rdquo;。所谓的&ldquo;酥&rdquo;,主要是由面粉和猪油混合而成的,也叫油酥面。把油酥面裹在水油皮里头擀制,做出来的月饼皮酥脆可口,层次分明。 /></p><p>&nbsp;</p><p>接着,和面师傅用擀面杖将揉捏好的夹心面团推开,推成一整张方形的面皮,用刀沿面皮的正中间切开,把切开后的两块面皮分别从侧面一点点卷起来,再把卷好的面皮揉成长条。  </p><p>&nbsp;</p><p>&ldquo;这道工艺叫&lsquo;起酥&rsquo;,是最复杂的也是至关重要的工艺,月饼外皮的所有层次感就全靠这一步。&rdquo;王义民说,将面皮卷起来,面团里面就会呈现层次,和面师傅在卷的时候要特别注意力道,用力太大,层次就容易被揉没了,力道不够,层次就会显得松垮。要求是每片饼皮里有十几层的分层,这样才能达到苏式月饼饼皮酥而不碎的口感。</p><p>&nbsp;</p><p>《亿民月饼》独树一帜,引领着义亭月饼市场的风潮。收获很多殊荣,并成功申请金华非遗产品。</p><p>&nbsp;</p><p>近几年,义亭的月饼厂如雨后春笋般涌现,大大小小十九家竞相绽放,如&ldquo;媛伟糕点&rdquo;月饼(纯手工制作),&rdquo;家晖月饼&rdquo;都是不错的选择,每一家都秉持着独特的制作风味与销售策略,共同传承着古老的月饼制作工艺。义亭月饼的制作周期虽短却精妙&mdash;&mdash;中秋前夕,月饼协会一声令下,各家便齐心协力,统一开启生产序幕。而且,多数厂家遵循订单式生产,确保了月饼的供需平衡,避免了生产过剩的尴尬,也让每一块月饼都新鲜出炉,不含丝毫化学添加剂,保留了最纯粹的节日味道。</p><p>&nbsp;</p><p>在众多品牌中,王仟村的&ldquo;中禾月饼&rdquo;犹如一颗璀璨的明珠,以其别具一格的口感脱颖而出,鹤立鸡群。在这个日新月异、创新为王的时代,任何产品都不能固步自封、一尘不变,唯有不断革新,方能不被市场淘汰。尤其是在这个物质丰富、选择多样的当下,人们的味觉愈发挑剔,对美食的追求也达到了前所未有的高度。楼孝勇老板深谙此道,他敢于挑战传统,勇于在原有的工艺基础上进行大胆创新。正是这份魄力与智慧,让&ldquo;中禾月饼&rdquo;弥补了传统土月饼存放几天便发硬的不足,实现了酥而柔软、甜而不腻的完美口感。即便是存放多日,其口感依旧如初,让人每一次品尝都能感受到那份最初的惊喜与满足。</p><p
